Oven Roasted Potatoes (Stove-top too)
We Love our oven roasted potatoes, and this recipe is really easy and actually healthy.
The basic potato. Budget-friendly and seemingly endless possibilities.
Preparation is pretty fast whether chopped or tossed in the food processor and then just 30 minutes later you’re sitting down to a delicious meal.
Everybody in our household loves them, so they go fast. I’ve even prepared larger batches to also enjoy them with breakfast the next day too.
Nutrients
Potatoes are actually a good source of magnesium, vitamin C, B6, potassium, and manganese, as well as resistant starch. This type of starch doesn’t totally break down and can then become prebiotic food for good gut bugs.
Of course you have added nutrients from the onion and garlic, including B6, manganese, and vitamin C, and the different herbs you choose to use for seasoning.
In this recipe I used rosemary, which includes vitamins A, C and B6.
An easy, family friendly dish that's both nutritious and delicious.
- 4-6 Red potatoes (Cleaned and diced)
- 2-3 Tablespoons Expeller-Pressed or Refined Coconut Oil
- 1 Tablespoon Salt
- 1/2 Tablespoon Pepper
- 2-3 Cloves Garlic (scar and skin removed; minced)
- 1/2 Tablespoon Rosemary (dried) (or chopped leaves from a 2 inch branch)
- 1 Onion (preferably white, skin and ends removed, chopped)

Preheat oven to 350°.

Mix all your chosen ingredients together in a casserole dish.

Place dish in the oven in the center of the center rack.

Check at about 23 minutes and either remove from the oven or continue to cook at 5 minute intervals until you get them browned the way you like them.

Serve.
- If stove-top is preferred, cook on medium heat. Turn and move them 3-5 times and lid your skillet in between turns for a more even distribution of heat and cook.
- You might prefer using 1/2 to 1 Tablespoon of Powdered Garlic instead of fresh garlic.
- I prefer Tropical Traditions Expeller-Pressed Coconut Oil or Nutiva Refined Coconut Oil without the coconut flavor or a good extra virgin olive oil.
- I prefer Redmond Real Salt (Fine).
- Red potatoes are my preference.

Potatoes are such a healthy, filling food, and a great addition to many meals. And since we eat a lot of potatoes, I usually buy them by the bag full.

A Little More about These Oven Roasted Potatoes
Since coconut oil has a medium smoke threshold, be sure to keep your temperature below 374°. When making these on the stove, I like using my cast iron skillet for a nice, slightly browned potato.
Potatoes are a nightshade, however, like tomatoes and peppers, so watch out if you have problems with this food group.
