Oven Roasted Potatoes (Stove-top too)

An easy, family friendly dish that's both nutritious and delicious.

Ingredients
  • 4-6 Red potatoes (Cleaned and diced)
  • 2-3 Tablespoons Expeller-Pressed or Refined Coconut Oil
  • 1 Tablespoon Salt
  • 1/2 Tablespoon Pepper
Optional
  • 2-3 Cloves Garlic (scar and skin removed; minced)
  • 1/2 Tablespoon Rosemary (dried) (or chopped leaves from a 2 inch branch)
  • 1 Onion (preferably white, skin and ends removed, chopped)
Instructions
  1. Preheat oven to 350°.

  2. Mix all your chosen ingredients together in a casserole dish.

  3. Place dish in the oven in the center of the center rack.

  4. Check at about 23 minutes and either remove from the oven or continue to cook at 5 minute intervals until you get them browned the way you like them.

  5. Serve.

Recipe Notes
  1. If stove-top is preferred, cook on medium heat. Turn and move them 3-5 times and lid your skillet in between turns for a more even distribution of heat and cook.
  2. You might prefer using 1/2 to 1 Tablespoon of Powdered Garlic instead of fresh garlic.
  3. I prefer Tropical Traditions Expeller-Pressed Coconut Oil or Nutiva Refined Coconut Oil without the coconut flavor or a good extra virgin olive oil.
  4. I prefer Redmond Real Salt (Fine).
  5. Red potatoes are my preference.
