Oven Roasted Potatoes (Stove-top too)
We Love our oven roasted potatoes, and this recipe is really easy and actually healthy. It’s just the basic, budget-friendly potato, and here are two possible oven-roasting options that are either with or without oil.
Everybody in our household loves them, so they go fast. I’ve even prepared larger batches to also enjoy them with breakfast the next day too.
Nutrients
Potatoes are actually a good source of magnesium, vitamin C, B6, potassium, and manganese, as well as resistant starch. This type of starch doesn’t totally break down and can then become prebiotic food for good gut bugs.
Of course you have a plethora of accessible, including B6, manganese, and vitamins A, C, and more depending upon your seasoning choices.

An easy, family friendly dish that's both nutritious and delicious.
- 8-10 Red or Yellow Potatoes (Cleaned and sliced or diced)
- 1-2 Tbsp Expeller-Pressed or Refined Coconut Oil, Extra Virgin Olive Oil or Tahini
- ½-1 Tbsp Salt
- ½ Tbsp Pepper
- 1 Tbsp Corn Meal (include for oil free potatoes)
- ½-1 Tbsp Garlic Powder
- ½-1 Tbsp Rosemary (dried) (or chopped leaves from a 2 inch branch)
- ½-1 Tbsp Onion Powder
- ½-1 Tbsp Smoked paprika
- 1-½ Tbsp Cumin

Preheat oven to 350° for potatoes with oil and 400° without.

Prepare seasoning mixture in a small bowl and set aside. Include the corn meal here if you are making oil free potatoes.

Prepare potatoes and place in large mixing bowl.

Add either oil or tahini to potatoes and toss until potatoes are evenly coated.

Distribute the seasoning mix across the top of and then throughout potatoes as you toss to cover.

Transfer potatoes to either casserole dishes or edged cookie sheets and p in the oven in the center of the center rack.

Check at about 25 minutes and either remove from the oven or continue to cook at 5 minute intervals until you reach your preferred browned level.

Serve immediately with your favorite dipping sauce.
- We love enjoying the oil-free potatoes with our homemade honey (or maple syrup) mustard dressing.
- For Oil Free Potatoes, we usually combine garlic powder, onion powder, cumin, and smoked paprika with the corn meal, salt, and pepper.
- For Potatoes with oil, we usually use garlic powder, onion powder, and rosemary with the salt and pepper.
- I prefer Redmond Real Salt (Fine).
- Red or yellow potatoes are my preference.

Potatoes are such a healthy, filling food, and a great addition to many meals. And since we eat a lot of potatoes, I usually buy them by the bag full.

A Little More about These Oven Roasted Potatoes
Since coconut oil has a medium smoke threshold, be sure to keep your temperature below 374°. When making these on the stove, I like using my cast iron skillet for a nice, slightly browned potato.
Potatoes are a nightshade, however, like tomatoes and peppers, so watch out if you have problems with this food group.
