Love These Eggs with Potatoes, Onions, and Spinach (GF, DF)
We love these scrambled eggs with potatoes, onions, and spinach.
They’re so easy and filling and flavorful and the perfect breakfast to begin what will be a busy day. Since I’m one of those people that

Enjoy this egg and potatoes breakfast and stay satiated and energized until the next meal.
- 1 tbsp Extra Virgin Olive Oil
- 2 Eggs (whisked)
- 2 Potatoes (small yellow or red, diced)
- 1/4 Onion (small yellow, chopped)
- 1/4 Cup Baby Spinach (chopped)

Prepare ingredients and set aside,

Add olive oil and preheat skillet on medium heat,

Add potatoes and onions, and sauté until onions become translucent and potatoes soften and get a lightly brown edge, roughly 7-10 minutes, flipping and moving,

Add chosen seasonings and spinach, mix in, and sauté for 1-2 more minutes,

Whisk the eggs until blended and then pour over the sauteed vegetables,

Flip sections of the eggs to evenly cook the eggs,

Serve and enjoy.
Variations
While we most often enjoy this recipe simply with a bit of Salsa or Pico de Gallo on top, it’s also delicious wrapped in gluten free tacos. We usually enjoy topping them with Sauteed Peppers and Onions and prefer homemade or Siete brand tortillas.
