Crazy Day Hamburger Stacks
Wow. It was a Crazy Day!
Yesterday turned out to be a bit overloaded with appointments, chauffeuring, work, errands, and delays. I arrived home with absolutely No plan for dinner.
I sat on the couch long enough to catch my breath and toy with the idea of a “fend for yourself” night.
A Quick Weeknight Meal
Do you do those nights where basically everybody in the house creates their own meals (and maybe eliminate some leftovers from the fridge).
Unfortunately we didn’t really have any leftovers to speak of, since that’s what everyone ate for lunch, so I switched my thinking and decided on Hamburger Stacks.
One of our easy to prepare meals that can be flexed in different directions based on what’s in the fridge and pantry. They can be done quickly, and everybody’s taste buds happy.
An easy, weeknight dinner option that gives everybody their choice of toppings.
- 2 Tablespoons Coconut Oil (prefer organic)
- 2 pounds Ground beef (prefer organic, grass-fed and finished)
- 1/2 Tablespoon Salt
- 1/8 Tablespoon Ground Pepper
- 1 Tablespoon Ground Garlic (prefer organic)
- 1 Egg (prefer organic, free range)
- 1/2-1 Tablespoon Ketchup or Mustard
- 1 Dill Pickle (Chopped)
- 1 Red Pepper (Chopped)
- 1/8 Teaspoon Dill Weed (Chopped)
- 1 Jalapeno or Serrano Pepper (Chopped, but not so family-friendly)

Spread oil in the pan, cooking tray, or grill.

Mix remaining ingredients together in a bowl, form into small hamburger patties, and distribute in the pan, tray, or on the grill.

Cook for approximately 5 minutes on each side, and remove when all the pink of the meat is cooked away.

Serve with your toppings such as guacamole, sauteed onions, salsa and more.
- I like Tropical Traditions Expeller-Pressed or Nutiva Refined Coconut Oil.
- I prefer Redmond Real Salt (Fine).
- We love homemade or Bubbies Dill Pickles.
Variations
I usually just do the patties in my big cast iron skillet, but if you feel like it, definitely try grilling the hamburger patties for some added deliciousness. And your oven will work great too, and you can check out our meatballs post for more information on that.

Everybody can get creative on their stacks, choosing their favorite toppings, and all turns into an enjoyable meal and a good laugh together as we’re grouped at the dinner table at the end of what was a crazy day.
