We love these homemade, easy and quick ground beef tacos that deliver a healthy meal with lots of topping options to eat the rainbow!

Ingredients
  • 1 Tablespoon Coconut oil (Refined for no flavor)
  • 1 Pound Ground Beef (Defrosted & preferably organic, grass-fed)
  • 1/2 Cup Onion (Peeled, scar removed, diced)
  • 2 Cloves Garlic (Skinned, scar removed, minced)
  • 1/4 Tablespoon Cumin (Preferably organic & non-irradiated)
  • Salt & Pepper (To taste)
  • 1/2 Tablespoon Turmeric (Optional)
Instructions
  1. Melt and distribute the oil in your skillet.

  2. Add ground beef to medium heat skillet and break apart while stirring to lightly brown all.

  3. Add the remaining ingredients when the meat is nearly done and stir in well (Adjust the seasoning amounts to your preferred taste as needed)

  4. Wrap in your favorite tortillas with your chosen toppings and enjoy!

Recipe Notes
  1. If you don't have fresh garlic, use 1/2 - 1 Tablespoon of garlic powder.
  2. If you'll be topping your tacos with minimal fresh raw and/or sauteed veggies, consider adding 1 Tablespoon of organic taco seasoning.
  3. Look for organic, grass/bug-fed meats and eggs whenever possible. Check out area farmers markets, farmers, and/or LocalHarvest for sources nearby.
  4. I recommend organic fruits and veggies whenever possible. If able, grow your own, but don't forget your local farmers market and other sources and/or check out LocalHarvest for sources near you.
  5. You might find the “The Clean 15” and “The Dirty Dozen” lists at Environmental Working Group EWG helpful when considering organic and conventional fruits and vegetables.
  6. You could substitute ground chicken or turkey for the ground beef if preferred.
