Eggs with Mushrooms, Onion, Red Pepper, and Spinach (GF, DF)

I was surprised to realize how, other than the Breakfast Cookies we make regularly, I had totally missed adding our other favorite breakfast options on here. For that reason, watch for a few of our favorites coming soon. To start, I’m sharing our quick and easy eggs with mushrooms, onion, red pepper, and spinach breakfast.

A quick and easy breakfast that's delicious and filling
- 2 Eggs (whisked)
- 1 tbsp Extra Virgin Olive Oil or Refined Coconut Oil
- 2-3 Mushrooms (diced)
- ½ Cup Baby Spinach (loosely measured, chopped)
- ⅛-¼ Cup Onion (yellow, white, or green chopped/sliced)
- Salt and Pepper (to preferred taste)

Spread oil in skillet and begin to warm at medium heat on stove,

Once warm, add onions and mushroom and sauté through mushrooms releasing moisture and until onions are translucent (3-5 minutes), stirring periodically,

In a small bowl, break eggs and whisk,

Reducing heat to low, add spinach to skillet and stir in,

Add eggs to skillet, distributing across the other ingredients,

Turn off stove burner and flip eggs mixture until thoroughly cooked. Serve.
- Consider other ingredient possibilities like diced red or green pepper, minced garlic clove, diced yellow or red potato, etc.
- Possible toppings include microgreens, crumbled feta cheese, salsa, etc.
- I prefer farm fresh eggs from my local farmers and chickens that have enjoyed plenty of sunshine and bugs. They are usually a brighter, orange color and more flavorful.
A Quick, Nutritious Breakfast
This eggs with mushrooms, onion, red pepper, and spinach dish is so delicious. What makes it even better is knowing how nutritious it is. Real food ingredients are simply recognizable fuel that our bodies are built to run on. Here’s some of what you’re getting:
- Mushrooms are high in vitamins C, D, and several B vitamins, copper, selenium (thyroid beneficial), and iron,
- Spinach is high in iron, magnesium, vitamins K and C, several B vitamins. Also high in oxalates, but just by cooking the spinach you reduce/remove this problem,
- Onions are high in vitamins C and K, sulfur, chromium, quercetin, several B vitamins,
- Bell Peppers are high in Vitamins A, K, and C and several B vitamins,
- Farm Fresh Eggs have zinc, calcium, phosphorus, selenium, vitamin A and several B vitamins.
I love getting my fresh eggs from local farmers either directly or through area farmers’ markets or a small market nearby. If you would like a little more information about the increased benefits of farm fresh eggs, here’s a great article from Mother Earth News.
You can cook the spinach in the skillet, or let it steam under your freshly cooked eggs (after forgetting to add it to the pan like I did in the video).
